Ingredients (makes approx 12 pieces)
200g good quality dark chocolate (70–85%)
Line a flat tray with baking paper.
Break the dark chocolate into small pieces and gently melt it in a heatproof bowl over a pan of simmering water (or use a microwave in 20-second bursts), stirring regularly.
Add coconut oil if using, to improve shine and texture.
Once melted, pour the chocolate onto the lined tray and spread into a thin, even layer using the back of a spoon or spatula.
Sprinkle evenly with pistachios, almonds, and cranberries, pressing them lightly into the surface so they set into the chocolate. Finish with a light sprinkle of flaky sea salt.
Place the tray in the fridge for at least 1 hour, or until fully set.
Once firm, break into rustic shards or cut into neat squares. Store in an airtight container in a cool place.
