Sweet Potato & Black Bean Buddha Bowl with Avocado Dressing

Method

Roast the sweet potato: Preheat the oven to 400°F (200°C). Toss the cubed sweet potato with olive oil, paprika, cumin, salt, and pepper. Roast for 25–30 minutes, or until tender and slightly caramelized.
Prepare the quinoa or rice:
While the sweet potato roasts, cook the quinoa or brown rice according to the package instructions.
Make the avocado dressing: In a small blender or food processor, combine the avocado, lime juice, water, and tahini (optional). Blend until smooth and creamy. Add more water to adjust the consistency.
Assemble the bowl:
In each serving bowl, add a base of quinoa or rice. Layer with roasted sweet potato, black beans, spinach or kale, and red onion.
Top with dressing:

Drizzle the avocado dressing over the top and serve immediately. Toss lightly and enjoy.
